Friday is finally here!
Breakfast: 2 eggs scrambled with scallions (delish addition this morning)
Snack: 1 Yogurt
Lunch: Eggplant Boats (almost done!! The joys of cooking for 1)
Dinner: Asian Salad with Chicken
Tonight I’m going out to celebrate my little brothers birthday, so I know there will be drinking involved. But that’s ok, I will imbibe in moderation. Looking forward to a fun night out.
